Nutritious Summertime Cookouts

    During the summertime, cookouts become a popular gathering place for individuals as many enjoy spending extra time outdoors in the nice weather. Cooking on the grill can make for a tasty meal but often many of the traditional cookout foods can be higher in fat and may not contain many nutrients. By thinking beyond the traditional cookout meals, you add variety and more nutritious foods to your meal. Choosing meat options such as lean cuts of beef or pork, skinless poultry, or fish, can lower the saturated fat content of the meal. Grilled tofu, tempeh, or bean-based burgers offer vegetarian and vegan options. By basting summer seasonal vegetables such as corn on the cob, eggplant, summer squash, and sweet potatoes with olive oil and seasoning with herbs you can then cook them on the grill by placing them directly on the grill or wrapping them in tin foil. You can even grill up dessert by cooking fruit kabobs of pineapple slices or peach halves or even grilling up watermelon for 30 seconds to bring out unique flavors. By adding some variety and bringing new ideas to the cookout, you can help make your summer meals more nutritious and leave you feeling more satisfied after the meal.
