Summer Squash

Summer is a great time for squash, such as zucchini, patty pans, and yellow crooknecks. Summer squash can have many health benefits because it is a good source of vitamin C, potassium, and fiber. This vegetable can be used in many different fun, kid-friendly recipes. One recipe option would be to grate it and bake it. Grated summer squash can be a great ingredient in pancakes, muffins, and more. Another option for this vegetable would be to stuff it with beans and lentils. Also, for a really simple recipe, summer squash can be cut into strips and grilled. Without even having to cook it, summer squash can be cut up and used in salads or used to dip in hummus. When using summer squash in recipes, keep in mind that smaller squash usually have more flavor, along with the fact that summer squash can be stored in the refrigerator for up to one week. Incorporating squash into your summer menus can be very beneficial due to its health benefits and the multitude of recipes that it can be used in.
