After Thanksgiving, there are usually lots of leftovers. One option for the leftovers is to reheat them to 165°F. However, there are lots of other leftover recipes that could make for some interesting meals!
- One option is to make a hearty harvest stew. This can be made with leftover gravy (fat skimmed away), turkey, vegetables, and thickened with mashed potatoes or sweet potatoes.
- Another meal made from Thanksgiving leftovers could be turkey berry wraps. These could be made from turkey, cranberry sauce, shredded greens, and whole-wheat tortillas.
- Cranberry smoothies could also be made from leftovers. They could consist of cranberries, frozen yogurt, and orange juice.
- Freezing the leftover turkey stock would be a good idea as well because it could later be used to add some flavor to couscous, pasta, rice, or soup.
- Another option for Thanksgiving leftovers could be a crunchy turkey salad. To make this, toss together cubed turkey, celery, apples, light mayo, and shredded baby spinach.
- The last recipe that could be made from leftovers could be a stuffing frittata. Simply mix together eggs with the leftover stuffing to make this.
