Swell Summer Food: Watermelon

            Watermelon is perhaps the epitome of summertime foods, and with good reason! Watermelon a very nutrient dense food, and is associated with a plethora of health benefits too. Even though watermelon is roughly 92 % water, it is considered a great source of the following nutrients: riboflavin, niacin, vitamin B-6, folate, pantothenic acid, magnesium, phosphorus, potassium, zinc, copper, manganese, selenium, choline, lycopene and betaine. In fact, according to the National Watermelon Promotion Board, watermelon contains more lycopene than any other fruit or vegetable. Diets high in lycopene tend to have a decreased risk for heart disease. A refreshing serving of watermelon may also aid in hydration, asthma prevention, and skin health. Additionally, athletes consuming watermelon have reported decreased muscle soreness and improved recovery.
