The colder months call for warmer dishes! This creamy broccoli soup is made with whole ingredients that pack nutrients into every bowl.
Ingredients:
1 tbsp olive oil
2 cloves minced garlic
1 yellow onion, chopped
8 cups broccoli, chopped (about 2 lbs)
4 cups water
15 ounces white beans, drained and rinsed
Salt and pepper to taste
3 tbsp lemon juice
1 cup low-fat Greek yogurt
¼ cup fresh chives, chopped
Directions:
1. Wash your hands.
2. In a pot, sauté the oil, garlic, onion, and broccoli for about 10 minutes, until ingredients are tender. Add the water and beans.
3. Puree the soup using a hand blender. Season with salt and pepper. Bring to a boil and let simmer for about 10 minutes.
4. In a separate bowl, mix the yogurt, lemon juice, and chives. Season with salt and pepper. Top the soup with this mixture, and enjoy!
