Chocolate Chip Banana Bread

    Chocolate chip banana bread is a classic favorite that can be enjoyed at all times of the day. This recipe utilizes whole-grain flour for a healthier modification to the baked good. 

Ingredients 

  • - Vegetable oil cooking spray 

  • - 4 large, peeled bananas 

  • - ¼ cup canola oil 

  • - ½ cup nonfat yogurt 

  • - 1 large, lightly beaten egg 

  • - 1 tsp vanilla extract 

  • - 1½ cups whole-wheat flour 

  • - ½ cup all-purpose flour 

  • - 1 cup sugar or sugar substitute 

  • - 1 tsp baking soda 

  • - ½ tsp salt 

  • - ½ cup mini chocolate chips 


Directions 

  1. 1. Preheat oven to 350°F. Lightly grease an 8- or 9-inch loaf pan with cooking spray. 

  1. 2. Mash the bananas, then mix with the oil, yogurt, egg, and vanilla extract. Stir well and set the mixture aside. 

  1. 3. Combine the flour, sugar or sugar substitute, baking soda, and salt in a separate bowl. 

  1. 4. Add the banana mixture to the dry ingredients and stir until just combined. Gently fold in the chocolate chips, then pour the batter into the loaf pan. 

  1. 5. Bake for about 45 minutes if using a 9-inch pan, or around 52 minutes for an 8-inch pan, until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes before removing it. 

  1. 6. Let it cool completely, then slice and wrap each piece individually. Store in the freezer. To serve, either let slices thaw at room temperature or toast them straight from the freezer.
