Ingredients
1 cup unsweetened vanilla almond milk
1 cup low-fat greek yogurt
2 tbs maple syrup (plus 4 tsp for serving)
1 tsp vanilla extract
¼ cup chia seeds
1 pint strawberries (chopped)
¼ cup sliced toasted almonds
Directions
Mix almond milk, yogurt, 2 tbsp maple syrup, and vanilla together in a bowl. Whisk in chia seeds and let sit for 30 minutes. Cover and refrigerate overnight.
Before serving, combine strawberries, 4 tsp maple syrup and almonds in a bowl. Put pudding into bowls and top with the berry mixture.
