Ingredients
17 oz pumpkin, skinned with seeds removed
4 tbsp olive oil
1 large onion, sliced
½ tsp ground ginger
½ tsp ground cinnamon
4 boneless, skinless chicken breast, cut into threes]
14 oz canned tomato
1-2 tsp sugar
2-3 tsp harissa seasoning
14 oz chickpeas, drained and rinsed
3 tbsp chopped coriander
Directions
Before you begin, wash your hands. Peel the pumpkin and remove seeds. Wash chicken breasts.
Step 1: Heat oil in a pad to med and fry onion for 10 minutes, stirring until golden. Add in ginger, cinnamon, and chicken pieces and cook for 3-5 minutes or until brown slightly all over.
Step 2: Add tomatoes, harissa seasoning, pumpkin pieces, and chickpeas into the pan and add 4-5 tbsp of water. Cover and cook for 20-30 minutes or until chicken and pumpkin is soft and add coriander as a topping then serve.
