Gingery Autumn Crunch Salad

Impress your guests this holiday season with this colorful, unique Asian-styled salad drizzled with a ginger, soy dressing. This salad involves no cooking, making it a simple recipe for stress-free holiday cooking. The delicious, crunchy carrots, cabbage and broccoli provide fiber, potassium and vitamins A and C. Try this Gingery Autumn Crunch Salad to add some colorful tang to your holiday menu!

Ingredients:
3 tsp. fresh lime juice
2 tsp. grated/minced fresh ginger
1 1/2 tsp. reduced sodium soy sauce
1 1/2 tsp. sesame seeds, toasted
1 tsp. sesame oil
1 tsp. vegetable oil
2 cups (145g) red cabbage, finely shredded
1 cup (90g) carrots, thinly sliced, rainbow if available
1 cup (60g) broccoli, finely sliced
2 Tbs. (12g) scallion/green onion, thinly sliced

Directions:
1.) In a big bowl mix together the lime juice, ginger, soy sauce, sesame seeds and oil, and vegetable oil. 
2.) Add in the cut veggies and mix all together well. 
3.) Let sit for 10 minutes for flavors to all come together.
*This salad tastes best when served fresh.
